Stuffed Zucchini

INGREDIENTS:

6 large zucchini, split lengthwise and hollowed out

1 onion, chopped

1/2 c. parsley, chopped.

1 clove garlic, pressed

2 eggs

1 1/2 c. chopped meat, cooked

1/2 c. bread crumbs.

1/2 c. Swiss cheese, grated

1 tomato

DIRECTIONS:

Chop the zucchini flesh that you hollowed out from the zucchini. In a large mixing bowl, combine the flesh with the onion, parsley, garlic, eggs, meat and breadcrumbs. Stuff the zucchini. Sprinkle the cheese over the zucchini. Place in buttered casserole dish and bake at 350 degrees for 30 minutes. Lay slices of tomato on top and bake for another 10 minutes.
