Steamed Red Snapper

Ingredients
1 - 1 3/4 to 2 1/2 lb. Whole Red Snapper, cleaned and scaled
1 Bunch Green Onions
1 clove garlic, crushed
5-10 slices fresh ginger
1 lemon or lime, sliced
1/4 c. soy sauce
Water for steaming
Directions
Prepare the pan for steaming. Pour water into the pan and fit the steaming rack into the pan. Make sure the lid fits well.
Open up the cavity in the fish that was left after the cleaning. Into the cavity place the green onions, garlic, ginger and lemon or lime slices. Close and wrap with kitchen string. Place the fish on the steaming rack. Pour the soy sauce over the fish, allowing the excess to drip into the water.
Steam for 15-20 minutes (depending on size) or until the fish is done (when the flesh flakes easily, its done.) Remove from rack, cut string and remove the bundles from the inside of the fish.
