Scalloped Potatoes

6 each potatoes -- peeled and sliced th

1 large onion -- chopped

2 cups milk

2 Tablespoons flour

2 Tablespoons butter

8 ounces cheddar cheese -- shredded

1 1/2 teaspoons salt

1 teaspoon pepper -- coarsely ground

In a saucepan combine the butter and flour over medium heat. Stir until

it makes a paste. Slowly add the milk, stirring after each addition.

Continue to cook and stir about 5 minutes until the sauce becomes thick.

Add the about 3/4 of the cheese, stirring after each addition, until all

the cheese is melted and the sauce is thick, creamy and smooth. Set

aside.

Place about 1/4 cup of the sauce in a buttered casserole. Place a layer

of potatoes on the sauce. Top with onions and another 1/4 cup of the

sauce. Continue to layer potatoes, onions and sauce until the casserole

is filled or you run out of potatoes. Top with sauce and then place the

remainder of the cheese on top.

Bake at 350 for about 70 minutes or until the potatoes are tender. Serve

immediately.
