MUSHROOM SAUCE
For Pasta
INGREDIENTS
1 1/2 lb. assorted mushrooms, cleaned and sliced
1/2 c. olive oil
1 Med. Onion, Sliced very thin
2 cloves garlic, finely minced
1 T. butter or margarine
1/4 c. extra virgin olive oil
DIRECTIONS
In a large sauce pan, saute the onions in the olive oil until lightly browned. Add the garlic and saute for about 1 more minute. Add the butter and allow to melt, then add the mushrooms and saute until browned. Pour mixture over hot cooked pasta, then add the extra virgin olive oil and toss well. Salt and pepper to taste. Serve with grated Romano cheese.
