1/2 cup butter
1/2 cup brown sugar -- packed
1 1/2 cups flour
1 each egg
1 each egg yolk
1/4 teaspoon vanilla extract
1/8 teaspoon maple extract
1/4 teaspoon baking soda
1/4 teaspoon salt
Pecan Halves
2 ounces baking chocolate
1/4 cup milk
1 Tablespoon butter
1 cup powdered sugar
Cream together the butter and brown sugar. Add in the egg and egg yolk
and beat until fluffy. Add in the extracts beating to combine. Then add
the flour, baking soda and salt. Chill dough.
Using four pecan halves, make an "X" on the cookie sheet. Roll about 1
T. of dough into a ball and place on the "X". Continue until all the
dough is used (you will have to use more than one cookie sheet). Bake at
350 degrees for 8 - 12 minutes or until the dough is golden brown.
Frosting:
Melt the chocolate over a double boiler (or in the microwave) and cool.
In a small mixing bowl cream the butter. Add the powdered sugar and milk,
beat until creamy. Add the melted, cooled chocolate and beat until well
combined and of a spreading consistency.
Frost each cookie - these are supposed to resemble chocolate turtles.
