Lemon Potatoes

2 Tablespoons Butter -- melted

2 Tablespoons fresh parsley -- chopped

2 teaspoons lemon juice -- fresh

1/8 teaspoon black pepper

3 pounds New Potatoes -- quartered

2 teaspoons grated lemon rind

Heat oven to 325 degrees. Grease rectangular pan, 11 x7 x 1 1/2 inches.

Mix margarine, parsley, lemon peel, lemon juice and pper in large bowl.

Add potatoes; toss with butter mixture. Place potatoes in pan. Roast

uncovered about 1 hour 10 minutes, turning occasionally until potatoes

are tender.
