Herbed Rib Roast

4 pounds beef rib roast

1 clove garlic -- cut in half

1/4 cup Dijon mustard -- country style

3/4 cup fresh parsley -- chopped

1 1/2 Tablespoons fresh thyme -- or 1 1/2 t. dried

1 1/2 Tablespoons fresh rosemary -- or 1 1/2 t. dried

2 cloves garlic -- minced

1 Tablespoon olive oil

Heat oven to 325 degrees. Place beef roast, fat side up, on rack in

shallow roasting pan. Rub roast with garlic halves. Spread mustard over

top and sides of roast. Mix remaining ingredients except oil; stir in

oil. Spread herb mixture over top and sides of roast.

Insert meat thermometer so tip is in center of thickest part of beef and

does not touch bone. Roast uncovered about 1 1/2 to 2 hours for medium.

Cover roast loosely with foil tent and let stand about 15 minutes before

carving.
