Oven Fried Chicken

This chicken is browned in oil and butter and finished in the oven.

INGREDIENTS

1 Large Roaster Chicken, cut into 8 pieces

3/4 c. Flour

Salt, Pepper, Paprika to taste

1/4 c. Vegetable Oil

1/4 c. Butter or Margarine

DIRECTIONS:

Preheat oven to 350 degrees.

Wash the chicken and pat dry with paper towels. Combine the flour, salt, pepper and paprika in a bag. Drop the chicken in the bag, a few pieces at a time. Close the bag and shake. Remove the chicken, shake off the excess flour and repeat with the remaining chicken.

Heat the oil and butter or margarine in a large skillet. When the oil is hot, place chicken pieces in the skillet and fry to a golden brown. Remove from the skillet and place in a baking pan.

Place baking pan in oven and bake for about 30 minutes, or until the chicken is tender and done.
