Cheese Sauce

2 Tablespoons Flour
2 Tablespoons Butter
2 Cups Milk
4 ounces Cheddar cheese -- shredded
1/2 teaspoon Black pepper -- ground
1 teaspoon salt
In a medium saucepan, melt the butter. Reduce heat to low. Add the flour
and stir to make a paste. Slowly add the milk to the butter/flour
mixture, allowing absorption after each addition and stirring constantly.
When the flour/butter paste is completely absorbed, add the rest of the
milk. Bring to a near boil (when bubbles are showing at the edges of the
pan). Add the cheese, pepper and salt. Stir constantly for about 1
minute.
