Bean Soup

Ingredient

1 pound Great northern beans 6 quarts water
1 medium onion -- chopped 1 1/2 Tablespoons salt
6 each ham hocks 1 Tablespoon black pepper -- ground

Directions

Place prepared beans in a large saucepot, cover with water. Add the onion, ham hocks, salt and pepper. Cook for 1 1/2 - 2 hours or until beans are tender. Serve immediately

Serving Ideas : With cornbread and salad

NOTES : Preparations for beans:

1) Soak overnight (at least 8 hours) in cold water. Drain off water. Cook as usual.

2) Quick cook method: cover beans with 6-8 cups of hot water. Boil for 10 minute, turn off heat, cover and let stand for 1 1/2 hours. Then cook as usual.

3) Grandmom's method: (PREFERRED) Add water to beans to cover. Put 1 t. of baking soda in water. Bring to boil and boil for 5 minutes. Drain and rinse beans and pan very well. Cook as usual.
