INGREDIENTS
3/4 cup shredded fresh coconut
2 tablespoons powdered sugar
or 3/4 cup sweetened flaked coconut
2 teaspoons orange juice
VARIATIONS:
1/2 cup diced fresh pineapple (optional)
3 tablespoons sour cream -- (optional)
1/4 cup miniature marshmallows
1 sliced banana
DIRECTIONS
Layer the orange slices alternately with the shredded, sweetened coconut in individual serving dishes. Sprinkle with the orange juice. Chill at least 20 minutes and serve. The midwestern variation mixes the oranges, coconut, sour cream, pineapple, orange juice and marshmallows all together.
